Guava, Lime & Basil Caipirinha
They were definitely onto something when they named the Bay of Plenty. There’s been truckloads of epic spots popping up lately - it’s hard to keep up! Like Mount Brewing Co’s recently revamped brewhouse and eatery, The Rising Tide. Powered by a solar panel roof, Mount Maunganui’s favourite brewery has created a space for locals and tourists alike to enjoy an extensive range of craft beers (their choc orange stout made for GABS was incredible), a delicious menu of house-made dumplings and a slick range of Almighty cocktails and non-alcoholics for those in the mood for something juicy.
With beach life and balmy nights just around the corner, we can’t go past The Rising Tide’s Guava, Lime & Basil Caipirinha as our go-to summer tipple. Do yourself a favour and give it a whirl.
- Half of 1 lime, sliced
- 1 Tablespoon of muscovado sugar
- 45ml white rum
- 1/3 bottle of Almighty Guava, Lime & Basil
- Lime slices, flower or fresh basil for garnish
Add muscovado sugar and 3 lime slices to a shaker or mason jar. Using a muddler (or back of a wooden spoon), mash the ingredients until the sugar is completely soaked in lime juice.
Add rum, Almighty Guava, Lime & Basil juice and a couple of cubes of ice to the mixture. Close the shaker lid and shake for around 15 seconds to combine.
Pour into a highball (or any) glass and garnish with a slice of lime. For pitchers, simply triple the recipe. Bueno!
